In Windows XP, I was able to use the MS Office Document Imaging, connecting
to my Canon Scanner. I was able to set up profiles for each category of
scanning that I do. However, in Vista, I'm not seeing the MS Office
Document Imaging.

Can anyone tell me if they have seen this great XP feature in Vista?

It's not part of Vista... it comes with MS Office.

I have MS Office 2003 installed, and and have MS ODI, though I don't use it.
I don't know about the profiles, though.

As Dave says, MODI is part of Office, not part of XP or Vista. To get this
feature, you'll need to install Microsoft Office on your Vista PC. Office
2003 and 2007 are fully Vista compatible, earlier versions have some minor
issues.
