Epson 2810 software full of bugs - how can this be solved properly.

Hi everyone,
I'm posting this both to share my experience and to add to the public record of what appears to be a widespread, unresolved issue with the ET-2810 on macOS Sequoia.
My setup: Epson ET-2810 EcoTank / macOS Sequoia 15.7.7 / Apple MacBook
Issues I'm experiencing:

Wireless connection to my MacBook is unreliable — drops out frequently and requires repeated troubleshooting to re-establish
Scanning is completely hit-and-miss from the Epson app — it works sometimes and fails other times with no change to settings or network
The Epson software itself appears buggy, not just the drivers

What I've tried:

Multiple hours of contact with Epson support
Downloaded updated software as advised by Epson support — worked briefly, then reverted to the same problems

Why I'm posting:
I've now seen enough threads here and on Apple's community forums to know this is not an isolated hardware fault. Epson appears to have an ongoing failure to maintain driver and software compatibility with macOS Sequoia across multiple printer models, including the ET-2810. Their support team acknowledges the issue but offers no timeline for a fix.
I have now submitted a formal written complaint to Epson Australia citing my rights under Australian Consumer Law, and I'm prepared to escalate to NSW Fair Trading and the ACCC if the issue remains unresolved.
If you are experiencing the same issues with your ET-2810 (or other Epson models) on Sequoia, please reply below. A visible record of affected users is one of the most effective ways to push for an actual fix.
