I currently have a Canon Pixma Pro-100. Because I don't print in color often the ink often dries up between uses. have an MFP M225 for everyday use so I wouldn't be printing text docs with the color printer. Is there any problem with a color laser printer sitting unused for extended periods?

Anything sitting for a long time could be problematic when you try using it again. If you turn it on and print one thing every two or three weeks, you'll be fine. They actually make software that will print a nozzle check pattern every X amount of days/weeks/months so you never have a dried up printhead. The good news is, your Pro-100 is by far one of the easiest printheads to clean out there. Great machine
