Epson Expression Premium XP-900 - won't print in colour even though plenty ink in cartridges

Hi, my Xp-900 has plenty ink in all five cartridges, but when I go to "Printing Preferences" in the menu of whatever application I'm using, (currently MS WordPad, but I've had the same issue with non-MS apps, such as Open Office), and select Color - Color - then sometimes Quality - High, then click Print, it is consistently printing in black/white only.
Any ideas please?
