ET-2550 paper settings missing

Hi,
I've just bought an Epson ET-2550 for my iMac and I can't find any other options than settings for plain paper in the printer dialog box. I've even selected Matte paper on the actual printer display but it will not give me the option when trying to print images in Photoshop elements 15. I am also new to Macs so it could well be my error. I'm using the latest operating system and new drivers.
