Making changes to Apple's CUPS

From what I have been able to discover, Apple uses the Common UNIX Printing System or CUPS as the basis for its printing system. I am running OSX 10.11.6 and with this version of the OS there is no longer a way to get to the sub menus from the Print (command) window. There is a way to get to the CUPS using the Spotlight search symbol in the upper right hand corner of the screen. Typing in "terminal" in the Spotlight window brings up the Terminal page. Clicking on the black square brings up a panel where one can type commands. I need the set of commands to use to get to the default "grayscale" box so I can undo it and thus get my Samsung C1810 printer to print output in color.

Any help or references would be appreciated.
