Cannot use printer options after "upgrading" our Mac OS

We use the Konica Minolta Bizhub 258. On our older Mac using OSX 10.12.6 Sierra is easy to access the options our copier offers.

On an OS 12.3 Monterey Mac we can't set tray, paper weight, color or grey scale, etc.. Only the most basic options are available.

On an OS 13.1 Ventura Mac some options are available after navigating a poorly designed option tree. But we can't add the finisher for folding, collating and stapling. It says we can't do that for a Bonjour shared printer.

Our OSX 10.12.6 computer is aging and I don't know how much longer it will remain in use. When it fails it looks like Apple's "improvements" will greatly decrease the services we can offer to our customers.
